Mango Vinaigrette:
½ mango
½ cup fresh lemon juice
3 Tbsp olive oil
1/8 tsp crushed red pepper flakes
salt/pepper
Blend mango and lemon juice in blender.
Whisk in olive oil, red pepper, salt, and pepper.
Mix with ½ lb lettuce (or field greens), seedless cucumber slices, and thinly sliced mango from remaining half.
