Grilled Lime Chicken with Peanut Satay

From an Ina Garten recipe in Martha Stewart Living

Marinade

¼ cup fresh lime juice

¼ cup canola oil

¼ cup soy sauce

2 Tbsp sesame oil

1. Marinade 1 lb boneless skinless chicken breast overnight.

2. Grill 10 minutes on each side.

3. Let cool. Slice into strips.

4. Serve in a salad or on wooden skewers with a satay dip.

Satay dip

2 tsp sesame oil

1 tsp olive oil

1 small yellow onion, minced

2 cloves garlic, minced

1 ½ tsp fresh ginger, minced

¼ tsp red pepper flakes

½ cup peanut butter, smooth

¼ cup dark brown sugar

2 Tbsp white wine vinegar

2 Tbsp soy sauce

1 Tbsp ketchup

1 ½ tsp fresh lime juice

1. Cook oils over medium heat.

2. Add onion, garlic, ginger, red pepper flakes. Cook, stirring, about 8 minutes.

3. Whisk in peanut butter, brown sugar, soy sauce, ketchup, and lime. Cook just until hot.
