Chopped Salad

2 Tbsp fresh lemon juice
1 ½ tsp sugar
1 clove garlic, minced
½ tsp salt
¼ tsp freshly ground black pepper
1/3 cup olive oil
1 head romaine lettuce, chopped finely
1 seedless cucumber, chopped
2 tomatoes, chopped
1 yellow bell pepper, chopped
½-1 small red onion, chopped
1 cup flat-leaf parsley, chopped
½ cup black olives, quartered

Make dressing: whisk lemon juice, sugar, garlic, salt, and pepper. Whisk in oil.
Toss dressing with remaining ingredients.
