Jewish Apple Cake

1 cup oil
1/4 cup orange juice
4 eggs
2 tsp vanilla
2 cups sugar (use less)
3 cups flour
2 tsp baking powder
5 apples (I prefer Rome)
cinnamon and sugar

1. Mix the dry and wet ingredients separately, then mix together.

2. Slice and peel apples; mix with cinnamon and sugar. Toss all but 8 slices into the batter.

3. Pour into greased pan (angel food or spring form). Arrange the 8 slices around the top like a clock, round side up.

4. Bake at 350 degrees for about 1 hour.
