Israeli Couscous

This salad takes advantage of all the fresh mint and parsley in my garden at this time. If your grocery store doesn't have Israeli couscous, you can also find it at specialty stores like Trader Joe's and Whole Foods.

1 small red onion, diced
2 cups water
8 oz Israeli couscous
1 1/2 tsp kosher salt
1/4 cup chopped flat-leaf parsley
1/4 cup chopped mint leaves
2 tsp olive oil
2 tsp fresh-squeezed lemon juice

Coat a pan with cooking spray. Cook couscous over medium heat, stirring constantly, one minute.

Add water. Bring to a boil.

Add 1 tsp salt. Cook for 8 minutes, or until all water absorbed and couscous al dente.

Let cool and mix with remaining ingredients.
