Cabbage Salad

This is a Mediterranean-style substitute for cole slaw, as it uses the traditional lemon/garlic/olive oil dressing.

1 lb shredded cabbage
1/4 cup kosher salt (it will be rinsed off)
6 garlic cloves, minced
2 Tbsp fresh lemon juice
6 Tbsp olive oil
1 Tbsp chopped mint leaves, or 1/2 tsp dried mint

Toss the shredded cabbage in a large bowl with the salt and let sit for 1 hour (to reduce the bitterness). Thoroughly wash off the salt and let drain.

Toss well with the garlic, lemon juice, olive oil, and mint. Add more salt if neededCheck the seasonings, although it
should not need any more salt. Serve immediately.
