1 stick margarine
2 onions, chopped
4 lbs. chicken pieces
1 clove garlic, minced
1 can stewed tomatoes
1 can tomato paste
1 1/2 cup water
2 bay leaves
1 tsp. oregano
1/2 teaspoon celery seeds
salt and pepper
Melt margarine in large skillet over medium heat. Cook onions until translucent, then remove from pan.
Sear chicken, 3 minutes per side.
Return onions. Add remaining ingredients. Cover and simmer over low heat for 30-40 minutes, until thick.
Serve over brown rice.
