Iraqi Red Rice

1 cup basmati rice
1 ½ cups water
½ onion
2 Tbsp tomato paste
1 Tbsp olive oil
pepper, salt, chili pepper

Sauté onion about 5 minutes over medium heat.
Add rice. Stir quickly 30 seconds.
Add water. Turn up heat to high.
Add tomato paste, salt, pepper, chili pepper.
Boil. Cover and simmer 20 minutes on low.
Turn off. Sit 2 minutes.
