Gazpacho

1 seedless cucumber
2 red bell peppers
4 plum tomatoes
1 small red onion
3 garlic cloves, minced
3 cups tomato juice
1/4 cup white wine vinegar
1/4 cup olive oil
1/2 Tbsp kosher salt
1 tsp black pepper

Roughly chop the cucumber, peppers, tomatoes, and onion. Finish chopping in food processor, blender, or with immersion blender (smooth, with chunks to desired consistency).

Pour into a bowl and mix with garlic, tomato juice, vinegar, olive oil, salt, and pepper. Chill.
