Wheat Berry Salad

This side dish is served at a restaurant where I frequently eat lunch, and they always run out of it. You can substitute other dried fruit for the cranberry, or mix and match.

4 cups water
3/4 tsp salt
1 cup wheat berries
2 Tbsp walnuts, toasted and chopped
1 Gala or McIntosh apple, cut into 1/2 inch pieces
1 Granny Smith apple, cut in to 1/2 inch pieces
1 celery rib, thinly sliced
2/3 cup packed fresh mint leaves, chopped
3/4 cup cranberries
2 scallions, chopped (or 1 Tbsp red onion)
2 Tbsp seasoned rice vinegar (or white wine vinegar with 1 tsp sugar)
3 Tbsp orange juice

1. Bring the salted water to a boil. Add the wheat berries; cover and simmer 1 1/2 hours.

2. Mix in all the ingredients. Serve cold or at room temperature. May be made a day ahead.
