Ethiopian Feast

Beef and Peppers
Green chiles
2 tsp chopped ginger
4 cloves garlic
1/4 tsp cardamom
14 tsp turmeric
1/4 tsp cinnamon
1/4 tsp cloves
1/2 cup red wine
2 lb steak, cut in 1/2 inch strips
5 Tbsp oil
2 cups onion, chopped
2 bells peppers, cut in strips

Puree chiles, ginger, garlic, spices, and wine to a smooth paste. Brown beef in hot oil. Remove. Drain oil, leaving 2 Tbsp in pan. Saute onion until soft but not brown, add peppers and saute for 3 more minutes. Add chile puree and bring to a boil, stirring constantly. Return the beef; stir and simmer for 10 minutes until beef is done.

Ful
1 can butter beans
1/3 cup olive oil
1 Tbsp cumin
chili powder, to taste
1 chopped tomato
1 chopped chili pepper
1/2 chopped small onion

Boil beans, including liquid, in pan. Lower heat and simmer, mashing and cooking down until resembles refried beans. Add oil, cumin. Cook 15 minutes. Add chili powder.

Gomen Wat (collard greens)
1 bunch collard greens, chopped, stems separated from leaves
1 med onion, chopped
1 Tbsp niter kebbeh
salt and pepper

Heat niter kebbeh in pan. Saute onions, stems and some salt until stems softened and onion clear.
Add leaves and a bit of water if needed. Cover and cook until soft, stirring occasionally. Season with salt and pepper.

Niter Kebbeh
1 stick margarine
1 Tbsp onion, finely chopped
1 tsp garlic, minced
1/2 tsp minced ginger
1/8 tsp turmeric
1 green cardamom pod, crushed
1 small cinnamon stick
1 whole clove
dash nutmeg

Melt margarin over low heat. Add other ingredients. Simmer uncovered 20-30 minutes. Don't let it brown. Strain through cheesecloth. Refrigerate until set.

Injera
3 cups self-rising flour
1/4 cup whole wheat flour
1/2 cup teff flour
1 Tbsp (1 package) yeast
3-1/2 cups warm water

Mix all ingredients in a large bowl. Cover and let sit 3-6 hours, until stretchy.
Stir batter. Blend, thinning with 1/2 cup water. Batter will be thin.
Heat 10-inch pan over medium or medium-high heat. Pour 1/3 cup of batter and swirl to coat (no thicker than 1/8 inch). Remove when bubbling (do not flip)
